Ingredients

  • 1.5 lb beef steak (such as sirloin or flank)
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder

    Pat the 1.5 lb steak dry with paper towels. Rub with 2 tbsp olive oil, then season evenly with 1 tsp salt, 1/2 tsp black pepper, and 1 tsp garlic powder.

    Preheat a grill or grill pan over high heat until smoking hot, about 5 minutes. Place the steak on the grill and cook without moving for 4-5 minutes, until grill marks form and the bottom is browned.

    Flip the steak and cook for another 4-5 minutes for medium-rare, or until it reaches your desired doneness (use a meat thermometer: 130°F for medium-rare). The surface should be charred and crusty.
