Ingredients
- 8 chops lamb chops
- 3 tbsp olive oil
- 2 cloves garlic
- 2 tbsp tomato paste
- 1 red bell pepper
- 4 cups mixed greens
- 1 red onion
- 4 pieces flatbread

Rub the 8 lamb chops with 1 tbsp olive oil, 1 minced garlic clove, and a pinch of salt and pepper. Let sit for 10 minutes.

While the lamb rests, make the sauce: heat 1 tbsp olive oil in a small pan over medium. Add 1 minced garlic clove and 1 chopped red bell pepper, cook until soft, about 5 minutes.

Stir in the 2 tbsp tomato paste and 1/4 cup water. Simmer until thickened, about 3 minutes. Season with salt and pepper. Blend until smooth if you prefer.

Heat a grill or grill pan over high. Cook the lamb chops for 3-4 minutes per side for medium-rare, or until nicely charred and cooked to your liking.
