Ingredients
- 1.5 lb ground beef
- 1 medium onion
- 3 cloves garlic
- ½ cup fresh parsley
- 1 tsp ground cumin
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil

Grate the 1 medium onion and squeeze out excess liquid. Mince the 3 garlic cloves and chop the 0.5 cup parsley.

In a large bowl, combine the 1.5 lb ground beef, grated onion, minced garlic, chopped parsley, 1 tsp cumin, 1 tsp salt, and 0.5 tsp black pepper. Mix until just combined.

Divide the mixture into 8 equal portions. Shape each around a skewer into a 6-inch long sausage shape, pressing firmly.

Brush the kofta with the 2 tbsp olive oil. Preheat a grill or grill pan over medium-high heat.

Grill the kofta for 10-12 minutes, turning every 3-4 minutes, until charred on all sides and cooked through (no pink inside).

Rest the kofta for 5 minutes before serving. Serve with flatbread, salad, or rice.
