Ingredients
- 1.5 lbs kielbasa or smoked pork sausage
- 1 large yellow onion
- 3 tbsp whole-grain mustard
- 2 tbsp olive oil
- ½ tsp caraway seeds (optional)
- 1 pinch salt and black pepper

Slice kielbasa on a diagonal into 1/2-inch-thick pieces. Preheat a grill or large skillet to medium-high.

Grill or sear kielbasa 2 minutes per side until edges are charred and golden. Transfer to a plate.

Thinly slice the onion. Add oil to the same pan and sauté onion over medium heat, stirring occasionally.

Cook until onion turns deep golden brown and crispy at the edges, 8–10 minutes. Add caraway seeds if using.

Return kielbasa to pan and toss to combine. Stir in mustard and toss until evenly coated.
