Ingredients
- 1 lb kielbasa (Polish smoked sausage)
- 1 large yellow onion
- 3 tbsp whole grain mustard
- 1 tbsp olive oil
- 1 pinch salt and black pepper

Slice kielbasa on the bias into 1/2-inch-thick rounds. Slice onion into thin rings.

Heat oil in a large skillet over medium-high. Add onions, stir often until golden and charred, 6–7 minutes.
