Ingredients

  • 1 lb kielbasa (Polish smoked sausage)
  • 1 large yellow onion
  • 3 tbsp whole grain mustard
  • 1 tbsp olive oil
  • 1 pinch salt and black pepper

Instructions

    Slice kielbasa on the bias into 1/2-inch-thick rounds. Slice onion into thin rings.

    Heat oil in a large skillet over medium-high. Add onions, stir often until golden and charred, 6–7 minutes.

    Push onions to the side. Lay kielbasa slices flat on the hot skillet in a single layer.

    Sear kielbasa without moving for 2 minutes, then flip and sear 1–2 minutes more until edges are browned.

    Drizzle mustard over the kielbasa and onions. Toss to coat, cooking 30 seconds until glossy.

    Season with salt and pepper. Serve hot from the skillet.
