Ingredients

  • 1 lb (about 2 links) kielbasa sausage
  • 1 large yellow onion
  • 2 tbsp whole-grain mustard
  • 2 tbsp olive oil
  • 2 pieces crusty bread or rolls
  • 1 pinch each salt and black pepper

Instructions

    Slice onion into thin half-moons. Heat 1 tbsp oil in a large skillet over medium, then add onions with a pinch of salt.

    Cook onions, stirring occasionally, until deep golden and jammy, about 12 minutes. Transfer to a plate.

    Slice kielbasa into 1/2-inch-thick coins. Add remaining 1 tbsp oil to the skillet over medium-high heat.
