Ingredients
- 2 links (about 1 lb total) boerewors (South African pork sausage), coiled
- 1 large yellow onion, sliced into thin half-moons
- 3 cloves garlic cloves, minced
- ⅓ cup mayonnaise
- ½ lemon fresh lemon juice
- ¼ tsp hot chili flakes or cayenne pepper
- 2 tbsp fresh parsley, chopped

Heat a cast iron skillet or grill pan over medium-high. Add onions with a pinch of salt and cook, stirring often, until deep golden and jammy, about 12 minutes.

Push onions to the side. Add boerewors coil to the skillet and sear without moving for 4 minutes until the bottom chars.

Flip the sausage coil and sear the other side for 3 minutes. Internal temp should reach 160°F (71°C).

Remove sausage to a plate. Stir minced garlic into the hot pan with onions, cook for 30 seconds until fragrant.

Whisk mayo with lemon juice, chili flakes, and parsley in a small bowl until smooth and bright.

Plate the boerewors coil, spoon caramelized onions and garlic on top, and dollop with chili-lemon mayo.
