Ingredients

  • 1.5 lbs beef short ribs (asado de tira)
  • 2 links chorizo sausage, sliced into 1-inch rounds
  • 1 link morcilla (blood sausage), sliced
  • 1 whole rotisserie chicken, cut into 4 pieces
  • 2 large bell peppers (red or yellow), cut into quarters
  • 1 pinch kosher salt and fresh cracked black pepper to taste

Instructions

    Pat the short ribs dry. Season all sides generously with salt and pepper.

    Heat a large sheet pan or cast iron griddle over high heat for 3 minutes until smoking.

    Sear short ribs 3 minutes per side without moving. They should be dark brown and caramelized.

    Push ribs to one side. Arrange chorizo, morcilla, rotisserie chicken pieces, and peppers on the pan.

    Cook until chorizo renders and chars at edges, peppers blacken lightly, and meat is hot, ~5 minutes.
