Ingredients

  • 4 links (about 1 lb) Hungarian kolbász sausages (fresh pork)
  • ¾ lb pork shoulder or pork loin, cut into 1-inch cubes
  • 1 medium yellow onion, cut into chunks
  • 3 tbsp butter
  • 1.5 tbsp Hungarian paprika (sweet or hot, your choice)
  • ½ lemon, halved

Instructions

  1. 1

Thread pork cubes onto skewers, alternating with onion chunks. Season everything generously with salt and pepper.

  2. 2

Heat grill or grill pan to medium-high. Melt butter in a small bowl and stir in paprika until fragrant, about 30 seconds.

  3. 3

Lay sausages and skewers on the hot grill. Brush everything with paprika butter right away.

  4. 4

Grill 3–4 minutes per side, turning once, until sausages char and pork is cooked through. Brush with paprika butter again halfway through.

  5. 5

Transfer sausages and skewers to a plate. Squeeze lemon juice over the top.

  6. 6

Serve hot with fresh bread or mustard on the side if desired.
