Ingredients
- 1 lb flank steak
- 2 bell peppers
- 1 onion
- 3 tbsp olive oil
- 2 tbsp fresh herbs (parsley or chives)

Preheat grill to high. Toss the 2 sliced bell peppers and 1 sliced onion with 1 tbsp olive oil, salt and pepper. Grill in a grill basket or on foil, turning occasionally, until charred and tender, about 10 minutes.

Season the 1 lb flank steak with salt and pepper. Grill over high heat, 4-5 minutes per side for medium-rare, until nicely charred and internal temperature reaches 130°F.

Let the steak rest for 5 minutes, then slice thinly against the grain.

Meanwhile, make the sauce: whisk together 2 tbsp olive oil, 2 tbsp chopped fresh herbs, and a pinch of salt and pepper.
