Ingredients
- 4 filets white fish fillets
- 2 cups broccoli florets
- 1 cup mushrooms
- 2 medium carrots
- 1 medium red bell pepper
- 1 medium zucchini
- 3 tablespoons olive oil
- 1 medium lemon

Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

Cut the 2 carrots, 1 red bell pepper, and 1 zucchini into bite-sized pieces. Toss them with the 2 cups broccoli florets and 1 cup mushrooms on the baking sheet.

Drizzle the vegetables with 2 tablespoons of the olive oil, sprinkle with salt and pepper, and toss to coat. Spread them in a single layer.

Roast the vegetables for 15 minutes, until they start to soften and brown at the edges.

While the vegetables roast, pat the 4 fish fillets dry and brush them with the remaining 1 tablespoon olive oil. Season with salt and pepper.

After 15 minutes, push the vegetables to the sides of the pan and place the fish fillets in the center. Return to the oven and roast for 10-12 minutes, until the fish flakes easily with a fork and the vegetables are tender.
