Ingredients
- 2 fillets white fish fillets
- 2 medium tomatoes
- 100 g feta cheese
- 50 g mixed olives
- 3 tbsp olive oil
- 1 medium lemon

Pat dry the 2 fish fillets and season both sides with salt and pepper. Heat 1 tbsp of the olive oil in a grill pan over medium-high heat until shimmering.

Place the fillets in the pan and cook for 3-4 minutes per side, until the fish is opaque and flakes easily with a fork. Remove from the pan and set aside.

While the fish cooks, slice the 2 tomatoes and crumble the 100g feta cheese. Arrange the tomatoes on a plate, top with feta and the 50g mixed olives.
