Ingredients
- 4 fillets fish fillets
- 2 medium red bell pepper
- 1 medium onion
- 2 medium tomatoes
- 3 tablespoons olive oil
- 2 cloves garlic
- 1 teaspoon salt
- ½ teaspoon black pepper

Pat the 4 fish fillets dry and season both sides with 1/2 tsp salt and 1/4 tsp black pepper. Set aside while you make the sauce.

Heat 2 tbsp olive oil in a skillet over medium heat. Add 1 sliced onion and 2 minced garlic cloves; cook until soft and golden, about 5 minutes.

Add 2 chopped red bell peppers and 2 chopped tomatoes to the skillet. Cook, stirring occasionally, until the peppers are tender and the tomatoes break down, about 10 minutes.

Transfer the pepper mixture to a blender and blend until smooth. Season with the remaining 1/2 tsp salt and 1/4 tsp black pepper. Set aside.

Heat the remaining 1 tbsp olive oil in a grill pan or skillet over medium-high heat. Cook the fish fillets for 3-4 minutes per side, until they flake easily with a fork and are opaque throughout.
