Ingredients
- 1 lb boneless, skinless chicken breasts
- ⅓ cup peanut butter (or almond butter)
- ¼ cup coconut milk (or heavy cream)
- 1.5 tbsp fish sauce
- 1 whole lime (juiced)
- 1 tbsp ginger, minced
- 1 tbsp brown sugar

Cut chicken into 1-inch cubes. If using wooden skewers, soak them in water for 10 minutes while you prep.

Thread chicken onto skewers, leaving 1/4-inch gaps between pieces. Season with salt and pepper.

Heat a cast iron skillet or grill to high. Sear skewers 2–3 minutes per side until charred and cooked through.
