Ingredients

  • 1 lb boneless, skinless chicken breasts
  • ⅓ cup peanut butter (or almond butter)
  • ¼ cup coconut milk (or heavy cream)
  • 1.5 tbsp fish sauce
  • 1 whole lime (juiced)
  • 1 tbsp ginger, minced
  • 1 tbsp brown sugar

Instructions

    Cut chicken into 1-inch cubes. If using wooden skewers, soak them in water for 10 minutes while you prep.

    Thread chicken onto skewers, leaving 1/4-inch gaps between pieces. Season with salt and pepper.

    Heat a cast iron skillet or grill to high. Sear skewers 2–3 minutes per side until charred and cooked through.

    While chicken cooks, whisk peanut butter, coconut milk, fish sauce, lime juice, ginger, and brown sugar in a small bowl until smooth.

    Transfer skewers to a plate. Drizzle with peanut sauce and serve immediately with extra sauce on the side.
