Ingredients
- 1.5 lb chicken thighs, boneless skinless
- 1 lb smoked sausages (like kielbasa or bratwurst)
- 3 tbsp olive oil
- 3 garlic cloves, minced
- 2 tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- 1 lemon, cut into wedges
Instructions
- 1
In a large bowl, whisk together the 3 tbsp olive oil, 3 minced garlic cloves, 2 tsp paprika, 1 tsp salt, and 0.5 tsp black pepper. Add the 1.5 lb chicken thighs and toss to coat evenly. Let marinate at room temperature for 15 minutes.
- 2
Preheat your grill to medium-high heat (about 400°F). While it heats, pat the 1 lb sausages dry with paper towels.
- 3
Place the chicken thighs on the grill, skin-side down if they have skin. Cook for 6-7 minutes without moving, until grill marks form and the chicken releases easily.
- 4
Flip the chicken and add the sausages to the grill. Cook the chicken for another 6-7 minutes, until the internal temperature reaches 165°F and juices run clear. Turn sausages occasionally, cooking until browned and heated through, about 10 minutes total.
- 5
Transfer everything to a cutting board and let rest for 5 minutes. This keeps the chicken juicy.
- 6
Slice the sausages and serve the chicken whole with lemon wedges on the side for squeezing over the top.
