Ingredients
- 1 package (about 1.5 lbs) boerewors sausages
- 2 medium, sliced yellow onions
- 2 tbsp olive oil
- 1 tbsp white vinegar
- 2 tbsp whole grain mustard
- 1 to taste salt and black pepper

Preheat grill or cast iron skillet to high heat until it smokes lightly, about 3 minutes.

Coil the boerewors by holding one end and wrapping it around itself; pin with a skewer if needed to keep it flat.

Grill sausage 8–10 minutes, rotating every 2 minutes, until the skin crackles and darkens all over.

While sausage cooks, sauté onions in a separate skillet with 2 tbsp oil over medium-high heat, stirring occasionally, 6–7 minutes until charred and sweet.
