Grilled Boerewors with Burnt Onions

Ingredients

  • 1 package (about 1.5 lbs) boerewors sausages
  • 2 medium, sliced yellow onions
  • 2 tbsp olive oil
  • 1 tbsp white vinegar
  • 2 tbsp whole grain mustard
  • 1 to taste salt and black pepper

Instructions

    Preheat grill or cast iron skillet to high heat until it smokes lightly, about 3 minutes.

    Coil the boerewors by holding one end and wrapping it around itself; pin with a skewer if needed to keep it flat.

    Grill sausage 8–10 minutes, rotating every 2 minutes, until the skin crackles and darkens all over.

    While sausage cooks, sauté onions in a separate skillet with 2 tbsp oil over medium-high heat, stirring occasionally, 6–7 minutes until charred and sweet.

    Toss grilled sausage with the burnt onions, vinegar, and mustard; season with salt and pepper.

    Serve hot with the onions spooned on top.
