Grilled Boerewors with Charred Onions

Ingredients

  • ½ kg boerewors sausage
  • 1 large yellow onion, sliced thick
  • 2 tbsp olive oil
  • 2 tbsp white vinegar
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

    Heat a large cast-iron skillet or grill pan over medium-high heat until it shimmers, about 90 seconds.

    Coil the boerewors loosely and place it in the pan. Let it sear 3 minutes without moving until the underside browns.

    Flip the coil and cook 3 minutes more until the casing is charred and the interior is cooked through.

    Push the sausage to the side. Add onion slices with 1 tbsp oil and a pinch of salt to the empty space.

    Sauté onions 4 minutes, stirring once halfway, until edges are dark brown and caramelized.

    Drizzle vinegar over the onions, toss to coat. Serve the boerewors coil topped with charred onions and black pepper.
