Ingredients

  • ¾ lb ground beef
  • ¼ cup yellow onion, finely minced
  • ¼ cup fresh parsley, chopped
  • 1.5 tsp warm spice blend (cumin, coriander, paprika, black pepper)
  • 1 whole lemon
  • ¾ tsp salt

Instructions

    Mix ground beef, minced onion, parsley, spice blend, and salt in a bowl until just combined.

    Divide meat into 4 equal portions. Mold each firmly onto a metal skewer, forming a 6-inch-long log.

    Heat oil in a cast iron skillet over medium-high until it shimmers, about 90 seconds.

    Sear kebabs 3–4 minutes per side without moving. Surface should char; meat stays juicy inside.

    Transfer to a plate. Squeeze lemon over the top and rest for 2 minutes before serving.
