  • ½ cup all-purpose flour
  • 2 large eggs
  • 1.5 cups panko breadcrumbs
  • 1 cup vegetable oil
  • ¼ cup mayonnaise
  • 1 whole lemon
  • ¼ cup fresh parsley

    Heat 1 cup vegetable oil in a large skillet over medium-high until shimmering, about 2 minutes. Test with a breadcrumb—it should sizzle immediately.

    Fry the oysters in batches without crowding, turning once, until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels.
