Ingredients
- 1.5 lb beef sirloin or tenderloin, cut into 1.5-inch cubes
- ⅓ cup natural peanut butter (or tahini)
- 1.5 tsp coriander seeds
- 3 tbsp soy sauce
- 1 whole lime (juiced)
- ½ tsp red chili flakes or fresh red chili, minced

Toast coriander seeds in a dry skillet over medium heat for 1 minute until fragrant, then crush with the back of a spoon.

Whisk peanut butter, soy sauce, lime juice, crushed coriander, and chili flakes in a bowl until smooth.

Toss beef cubes with the marinade until evenly coated, then thread onto skewers (or rest on a plate for 5 minutes).

Heat a grill pan or cast iron skillet over medium-high heat for 2 minutes until it shimmers.

Sear skewers 2–3 minutes per side without moving, until edges char and beef is medium-rare to medium.
