Ingredients

  • 4 cups mixed greens
  • 2 large eggs
  • 1 tbsp sesame seeds
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • ¼ tsp salt

Instructions

    Place the 2 eggs in a small pot, cover with water, bring to a boil, then simmer for 9 minutes until hard-boiled. Drain and cool under cold water.

    In a small dry skillet over medium heat, toast the 1 tbsp sesame seeds for 2-3 minutes until fragrant and lightly golden, shaking often.

    In a large bowl, whisk together the 2 tbsp olive oil, 1 tbsp lemon juice, and 0.25 tsp salt. Add the 4 cups mixed greens and toss to coat.
