Ingredients

  • 1 cup rolled oats
  • 1.5 cups fresh spinach, packed
  • 2 whole ripe bananas, divided
  • 2 whole eggs
  • ½ cup Greek yogurt
  • 3 tbsp honey, divided
  • ½ cup walnuts, chopped
  • ½ tsp vanilla extract

Instructions

    Blend oats, spinach, 1 banana, eggs, yogurt, 2 tbsp honey, and vanilla until smooth, about 90 seconds.

    Heat a 12-inch nonstick skillet over medium. Pour batter into four circles, cooking 2–3 minutes until edges look set.

    Flip pancakes and cook 90 seconds until golden. Transfer to a plate.

    Slice remaining banana. Top pancakes with banana slices, walnuts, and remaining honey. Serve immediately.
