Ingredients

  • 2 whole eggs
  • ¼ cup whole milk
  • 4 slices bread, thick-cut (brioche or challah)
  • 4 tbsp creamy peanut butter
  • 1 whole banana
  • 2 tbsp honey
  • 2 tbsp butter
  • ¼ tsp ground cinnamon

Instructions

    Whisk eggs, milk, and cinnamon in a shallow bowl until combined.

    Heat butter in a large skillet over medium heat until it foams, about 60 seconds.

    Dip each bread slice into egg mixture, coat both sides, then lay on skillet. Cook 2 minutes per side until golden brown and edges curl.

    While toast cooks, slice banana into thin rounds and warm peanut butter in a small bowl (10 seconds in microwave works).

    Divide toast between plates. Spread warm peanut butter over each slice.
