Ingredients

  • 1 cup Greek yogurt
  • 3 large eggs
  • 2 tbsp honey
  • ½ tsp vanilla extract
  • 1.5 cups mixed fresh berries
  • ½ cup Greek yogurt for serving

Instructions

    Blend Greek yogurt, eggs, 1 tbsp honey, and vanilla until smooth. Batter will be thick.

    Heat a nonstick skillet over medium heat with a light oil coating until a droplet sizzles.

    Pour batter in 3-inch circles and cook until edges look set and bubbles form on top, ~2 minutes.

    Flip gently and cook another 90 seconds until bottoms are light golden. Transfer to a plate.

    Toss berries with remaining 1 tbsp honey in the same skillet and warm 2 minutes until softened.

    Stack pancakes on a plate, top with warm berry compote and a spoonful of yogurt. Serve immediately.
