Ingredients

  • 1 cup Greek yogurt
  • 2 whole eggs
  • ½ cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp vanilla extract
  • 2 medium, sliced fresh peaches
  • ⅓ cup fruit compote (or jam)

Instructions

    Whisk Greek yogurt, eggs, vanilla, flour, baking powder, and a pinch of salt until smooth.

    Heat a skillet over medium heat with a light coating of oil until it shimmers, about 90 seconds.

    Pour batter in 2–3 pancakes; cook 2–3 minutes until edges look set and bubbles form on top.

    Flip and cook another 1–2 minutes until golden brown on the bottom. Repeat with remaining batter.

    Warm the compote in a small saucepan or microwave, 1–2 minutes, while pancakes finish cooking.
