Ingredients

  • 1 cup oat flour
  • ½ cup Greek yogurt, plain
  • 2 whole eggs
  • 2 tbsp honey or maple syrup
  • 1 tsp baking powder
  • ½ tsp vanilla extract
  • 1 tbsp butter for the griddle

Instructions

    Whisk oat flour, baking powder, and salt in a bowl until no lumps remain.

    Stir yogurt, eggs, honey, and vanilla into the dry mixture until just combined; batter will be thick.

    Heat butter in a nonstick skillet or griddle over medium-high until shimmering, ~60 seconds.

    Pour batter in 1/4-cup portions onto the skillet, spacing them 2 inches apart.

    Cook until bubbles rise to the surface and edges look dry, 2 to 3 minutes.

    Flip once and cook until the bottom is light golden brown, 1 to 2 minutes.

    Transfer to a plate. Top with fresh berries, Greek yogurt, or a drizzle of honey if desired.
