Ingredients

  • 2 medium ripe bananas
  • 1 cup rolled oats
  • 3 whole eggs
  • ½ cup all-purpose flour
  • 1 tsp baking powder
  • 1 cup fresh strawberries
  • 1 medium banana, for topping
  • ½ cup maple syrup

Instructions

    Mash 2 ripe bananas in a bowl until mostly smooth. Add 3 eggs, 1 cup oats, 0.5 cup flour, and 1 tsp baking powder.

    Stir until just combined—some small lumps are fine. Do not overmix or pancakes will be dense.

    Heat a nonstick skillet over medium heat for 90 seconds until a drop of water sizzles on contact.

    Pour batter in 0.25-cup portions onto the skillet. Cook 2-3 minutes per side until golden and a toothpick inserted in the center comes out clean.

    Slice the second banana and halve the strawberries. Stack warm pancakes on a plate and top with fruit.
