Ingredients

  • 1 cup rolled oats
  • 1 medium ripe banana
  • 2 whole eggs
  • ½ cup milk
  • 1 medium banana sliced bananas
  • ½ cup fresh cranberries or papaya
  • 3 tbsp maple syrup

Instructions

    Blend oats in a food processor into coarse flour, about 30 seconds.

    Mash 1 medium banana in a bowl, then whisk in eggs, milk, oat flour, 1 pinch salt, and 1 pinch black pepper until smooth.

    Heat a non-stick skillet over medium-high with a light butter coating, ~1 minute.

    Pour batter in 1/4-cup portions, cooking 2–3 minutes per side until edges look set and surface bubbles pop.
