Ingredients

  • 1.5 lb boneless, skinless chicken thighs
  • 3 tbsp olive oil
  • 1 whole lemon (juiced)
  • 3 cloves garlic cloves, minced
  • 1.5 tsp dried oregano
  • ¾ cup tzatziki sauce
  • 4 whole pita bread
  • 1 medium tomato, diced
  • ½ medium red onion, thinly sliced

Instructions

    Cut chicken into bite-size strips, about 2 inches long.

    Toss chicken with lemon juice, garlic, oregano, 2 tbsp olive oil, salt, and pepper.

    Let sit while you prep the toppings, about 5 minutes.

    Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering.

    Add chicken and cook, stirring occasionally, until golden and cooked through, 8–10 minutes.

    Warm pita in the skillet 20 seconds per side until soft and pliable.

    Spread 2–3 tbsp tzatziki on each warm pita.

    Divide chicken evenly among pitas.

    Top with diced tomato and red onion slices.

    Fold pita in half and serve immediately.
