Chicken Gyro with Tzatziki

Ingredients

  • ¾ lb boneless, skinless chicken breast
  • ½ cup Greek yogurt
  • ½ medium cucumber, grated
  • 1 whole lemon (juiced)
  • 2 cloves garlic, minced
  • 4 pieces pita bread
  • 1 medium tomato, diced
  • salt and pepper to taste

Instructions

    Mix Greek yogurt, grated cucumber, half the lemon juice, 1 minced garlic clove, salt, and pepper. Set tzatziki aside.

    Pat chicken dry. Season both sides generously with salt and pepper.

    Rub chicken with remaining garlic and lemon juice on both sides.

    Heat olive oil in a large skillet over medium-high until shimmering, about 90 seconds.

    Sear chicken 5–6 minutes per side without moving. Interior should reach 165°F at thickest point.

    Transfer chicken to a cutting board and let rest 3 minutes, then slice into strips.

    Warm pitas in the skillet for 30 seconds per side, or wrap in foil and warm in oven at 300°F.

    Spread tzatziki on each pita. Layer chicken strips, diced tomato, and fold in half. Serve immediately.
