  • ½ cup all-purpose flour
  • 2 tbsp sugar
  • 1.5 tsp baking powder
  • ¾ tsp salt
  • ¾ cup buttermilk
  • 1 whole egg
  • 3 cups vegetable oil (for frying)

Instructions

    Whisk cornmeal, flour, sugar, baking powder, and salt in a bowl.

    In another bowl, whisk buttermilk and egg until blended.

    Pour buttermilk mixture into dry ingredients. Stir until just combined—batter will be thick and lumpy.

    Heat oil in a heavy pot to 350°F, checking with a deep-fry thermometer.

    Using a small cookie scoop or melon baller, carefully drop batter balls into hot oil—about 8 at a time.

    Fry 2–3 minutes, rolling occasionally, until golden brown all over and a skewer inserted meets no resistance.
