Ingredients

  • 1 cup cornmeal
  • ½ cup all-purpose flour
  • ¾ cup whole milk
  • 1 whole large egg
  • 1 whole jalapeño, minced (seeds removed for less heat)
  • 1 quart vegetable oil for frying

Instructions

    Whisk cornmeal, flour, 1 tsp salt, and 0.5 tsp black pepper in a large bowl.

    In a separate bowl, whisk milk, egg, and jalapeño until combined.

    Pour wet mixture into dry ingredients and stir until just combined—batter will be thick.

    Heat oil in a Dutch oven to 350°F on a deep-fry or candy thermometer.

    Working in batches, drop 1-inch spoonfuls of batter into oil without crowding.

    Fry 2–3 minutes, turning once, until golden brown on both sides.
