Ingredients

  • 1 cup cornmeal
  • ½ cup all-purpose flour
  • 2 tsp baking powder
  • 1 tbsp sugar
  • ¾ cup buttermilk
  • 1 whole egg
  • 3 cups neutral oil (for frying)

Instructions

    Whisk cornmeal, flour, baking powder, sugar, and salt in a medium bowl.

    Whisk buttermilk and egg in a small bowl until combined.

    Pour buttermilk mixture into dry ingredients. Stir until just combined; batter will be thick and lumpy.

    Heat oil in a heavy pot to 350°F. Use a thermometer to check—it should register exactly 350°F.

    Working in batches, carefully drop rounded tablespoon-sized portions into hot oil using a second spoon.

    Fry 2-3 minutes until golden brown on all sides, turning occasionally with a slotted spoon.
