Ingredients
- 4 steaks (about 150g each) gammon steaks
- 8 slices (fresh or canned) pineapple
- 3 tbsp brown sugar
- 2 tbsp Dijon mustard
- 1 tbsp olive oil
- ¼ tsp black pepper

Pat gammon steaks dry with paper towels. Score the fat edges at 1-inch intervals.

Mix brown sugar, Dijon mustard, and 1 tbsp water in a small bowl until smooth.

Heat olive oil in a large skillet over medium-high until shimmering, about 90 seconds.

Sear gammon steaks 2 minutes per side without moving. Edges should turn golden.

Brush each steak with glaze. Arrange pineapple slices on top.
