Ingredients

  • 4 steaks (about 150g each) gammon steaks
  • 8 slices (fresh or canned) pineapple
  • 3 tbsp brown sugar
  • 2 tbsp Dijon mustard
  • 1 tbsp olive oil
  • ¼ tsp black pepper

Instructions

    Pat gammon steaks dry with paper towels. Score the fat edges at 1-inch intervals.

    Mix brown sugar, Dijon mustard, and 1 tbsp water in a small bowl until smooth.

    Heat olive oil in a large skillet over medium-high until shimmering, about 90 seconds.

    Sear gammon steaks 2 minutes per side without moving. Edges should turn golden.

    Brush each steak with glaze. Arrange pineapple slices on top.

    Broil 4–5 inches from heat until glaze bubbles and caramelizes, about 3 minutes.
