Ingredients

  • 2 each (6 oz each) boneless pork chops
  • 2 each sweet potatoes, medium
  • 2 each apples, cored and sliced
  • 1 each onion, sliced into thin rings

Instructions

    Microwave sweet potatoes on high for 8 minutes, turning halfway, until fork-tender.

    Pat pork chops dry and season generously with salt and black pepper on both sides.

    Heat oil in a 12-inch skillet over medium-high until shimmering, then sear pork 3 minutes per side without moving until golden brown.

    Push pork to the side, add onion and apple slices to the skillet, then toss everything together for 4 minutes until apples soften.

    Add 1/4 cup water to the pan, scrape up any browned bits, and simmer for 2 minutes until the liquid coats the pork and apples.

    Halve the sweet potatoes and serve alongside the pork chops with caramelized apples and onions on top.
