- 2 chops (about 8 oz each) pork chops (1.5 inches thick, bone-in or boneless)
- ½ cup apple cider or apple juice
- 1 tbsp Dijon mustard
- 3 sprigs fresh thyme sprigs
- 2 tbsp unsalted butter
- 4 cups, packed hearty greens (kale, chard, or spinach)
- 1 whole, cored and sliced into 4 wedges apple (Granny Smith or Honeycrisp)

Heat 1 tbsp butter in a 12-inch skillet over medium-high until it foams. Sear pork chops 2 minutes per side without moving—surface should turn golden brown.

Pour apple cider around the chops. Add thyme sprigs, then cover with a lid. Simmer 6 minutes until pork reaches 145°F at the thickest point.
