Ingredients
- 4 steaks gammon steaks (bone-in, 1 inch thick)
- 2 cups fresh pineapple, cut into 1.5-inch chunks
- 3 tbsp whole-grain mustard
- 2 tbsp brown sugar
- 1 tbsp balsamic vinegar
- 4 sprigs fresh thyme sprigs
- ½ tsp black pepper
- 2 tbsp olive oil

Preheat oven to 400°F. Pat gammon steaks dry and season generously on both sides with pepper.

Whisk mustard, brown sugar, balsamic, and 1 tbsp olive oil in a bowl until smooth and glossy.

Toss pineapple chunks with 1 tbsp olive oil and salt. Spread on a sheet pan in one layer.

Nestle gammon steaks among pineapple. Brush each steak generously with the mustard glaze. Top with thyme sprigs.
