Ingredients

  • 1.5 lb pork ribs (baby back or spare), cut into 2-3 bone clusters
  • 3 tbsp ketchup
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 cup fresh pineapple, diced small
  • 1 whole red chili pepper, thinly sliced
  • 1 whole lime (zested + juiced)
  • ¼ cup cilantro, chopped (optional)

Instructions

  1. 1

Mix ketchup, soy sauce, and honey in a small bowl until smooth.

  2. 2

Pat ribs dry. Spread on a sheet pan and brush all over with the glaze.

  3. 3

Broil on high 4–5 inches from heat, 8 minutes per side. Edges should char and glaze should caramelize.

  4. 4

While ribs cook, toss pineapple, chili, lime juice, zest, and cilantro in a bowl.

  5. 5

Transfer ribs to a serving plate and spoon pineapple salsa on top or alongside.
