Ingredients

  • 1.5 lbs pork ribs, cut into individual bones
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 3 cloves garlic, minced
  • ½ tsp red chili flakes
  • 1 cup tomatoes, diced
  • 1 lb waxy potatoes, cut into 1-inch chunks

Instructions

    Toss potatoes with salt, pepper, and 1 tbsp oil on a sheet pan. Roast at 425°F for 15 minutes until golden and fork-tender.

    While potatoes cook, stir together soy sauce, brown sugar, minced garlic, and chili flakes in a small bowl.

    Heat 2 tbsp oil in a large skillet over medium-high until shimmering, about 90 seconds.

    Add ribs in a single layer and cook without moving for 4 minutes until edges brown and char slightly.

    Flip ribs, pour the sauce over them, and cook 5 more minutes, occasionally spooning glaze over meat until edges caramelize.

    Toss diced tomatoes with a pinch of salt and white vinegar. Serve ribs alongside roasted potatoes and tomato salad.
