Ingredients

  • 1.5 cups rotisserie chicken, shredded
  • ¼ lb ground chicken
  • 2 tbsp panko breadcrumbs
  • 4 cups chicken broth
  • ½ cup carrots, sliced thin
  • 2 tbsp fresh dill (or parsley), chopped
  • 4 slices bread slices for toasting

Instructions

    Mix ground chicken with panko, 1 tbsp water, salt, and pepper until just combined.

    Bring broth to a simmer in a large pot over medium-high heat.

    Roll chicken mixture into 12 small meatballs and drop into simmering broth.

    Add carrots and simmer until meatballs float and carrots are tender, about 8 minutes.
