- 12 oz sausage
- 3 eggs
- 1 medium red onion
- ¼ cup apple cider vinegar
- 2 tbsp olive oil
- 1 tbsp Dijon mustard
- ¼ cup fresh parsley

Place the 1.5 lb potatoes in a pot, cover with salted water, and bring to a boil. Cook until fork-tender, about 15-20 minutes. Drain and let cool slightly.

While potatoes cook, place the 3 eggs in a small saucepan, cover with water, and bring to a boil. Remove from heat, cover, and let stand 10 minutes. Drain, cool under cold water, and peel.

Slice the 12 oz sausage into 1/4-inch rounds. Heat a large skillet over medium-high, add the sausage, and cook until browned, about 5-7 minutes. Remove and set aside.
