German Potato Salad with Sausage

Ingredients

  • 1.5 lb potatoes
  • 12 oz sausage
  • 3 eggs
  • 1 medium red onion
  • ¼ cup apple cider vinegar
  • 2 tbsp olive oil
  • 1 tbsp Dijon mustard
  • ¼ cup fresh parsley

    Place the 1.5 lb potatoes in a pot, cover with salted water, and bring to a boil. Cook until fork-tender, about 15-20 minutes. Drain and let cool slightly.

    While potatoes cook, place the 3 eggs in a small saucepan, cover with water, and bring to a boil. Remove from heat, cover, and let stand 10 minutes. Drain, cool under cold water, and peel.

    Slice the 12 oz sausage into 1/4-inch rounds. Heat a large skillet over medium-high, add the sausage, and cook until browned, about 5-7 minutes. Remove and set aside.

    In the same skillet, reduce heat to medium. Add the 2 tbsp olive oil and 1 sliced red onion. Cook until softened, about 3-4 minutes.

    Whisk in the 1/4 cup vinegar and 1 tbsp mustard. Simmer for 1 minute, scraping up any browned bits. Season with salt and pepper.

    Slice the warm potatoes and eggs. In a large bowl, combine potatoes, eggs, sausage, and the warm dressing. Toss gently to coat.

    Stir in the 1/4 cup chopped parsley. Serve warm or at room temperature.
