Ingredients

  • 1 lb ground beef
  • 1 large egg
  • ½ cup breadcrumbs
  • 1 lb potatoes
  • 1 head broccoli
  • 1 cup tomato sauce

Instructions

    Preheat oven to 400°F. In a bowl, mix 1 lb ground beef, 1 egg, 1/2 cup breadcrumbs, and a pinch of salt and pepper until just combined. Shape into a loaf and place in a baking dish.

    Bake the meatloaf for 25-30 minutes, until the internal temperature reaches 160°F and the top is browned.

    While the meatloaf bakes, peel and quarter 1 lb potatoes. Boil in salted water for 15-20 minutes, until fork-tender. Drain and keep warm.

    Steam or boil 1 head of broccoli florets for 5-7 minutes, until bright green and crisp-tender. Drain.

    In a small saucepan, heat 1 cup tomato sauce over medium until hot, about 5 minutes. Slice the meatloaf and serve with potatoes, broccoli, and sauce spooned over the top.
