Ingredients
- 4 whole eggs, hard-boiled and peeled
- 1.25 lb ground beef
- ½ cup panko breadcrumbs
- ½ medium onion, finely diced
- 3 tbsp Dijon mustard
- ¼ cup dill pickle, chopped
- ½ cup beef broth

Combine ground beef, breadcrumbs, diced onion, 1 tbsp mustard, salt, and pepper in a bowl until just mixed.

Divide meat into 4 portions. Wrap each around a hard-boiled egg, sealing the meat around it into an oval loaf.

Heat oil in a large skillet over medium-high until shimmering. Sear meatloaves 3 minutes per side until golden brown.

Remove meatloaves to a plate. Pour broth into the skillet, scraping up browned bits with a spoon.

Stir in remaining 2 tbsp mustard and chopped pickle. Return meatloaves to the pan and simmer 4 minutes until heated through.
