Ingredients

  • ½ lb shrimp, peeled and deveined
  • ½ lb squid, cleaned and sliced into rings
  • 6 cloves garlic cloves, minced
  • 2 tbsp fish sauce
  • 4 cups fresh leafy greens (spinach, bok choy, or amaranth)
  • 1 cup chicken or seafood broth

Instructions

    Heat 2 tbsp oil in a large skillet over medium-high heat until shimmering, about 90 seconds.

    Add minced garlic and cook 30 seconds until fragrant, then add shrimp and squid rings.

    Sear seafood without stirring for 2 minutes, then stir and cook 1 more minute until mostly opaque.

    Pour in broth and fish sauce, bring to a boil, then add leafy greens and stir.

    Simmer 2 minutes until greens wilt and shrimp are fully cooked through.

    Taste and adjust with salt, pepper, or extra fish sauce. Serve hot in bowls.
