Ingredients

  • 1 lb shrimp, large, peeled and deveined
  • 1 whole (zested + juiced) lemon
  • 4 cloves garlic, minced
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • 2 rounds pita bread
  • 1 cup cherry tomatoes, halved

Instructions

    Mix lemon zest, lemon juice, minced garlic, olive oil, oregano, and a pinch each of salt and pepper in a bowl.

    Add shrimp to the marinade and toss until coated. Let sit 5 minutes while you prep skewers.

    Thread shrimp onto metal or soaked wooden skewers, dividing evenly between 2 skewers.

    Heat a grill or cast-iron skillet over high heat until very hot, about 2 minutes.

    Sear shrimp 90 seconds per side without moving until edges char and shrimp curl, ~3 minutes total.

    Warm pita briefly on the grill. Serve skewers with pita, fresh tomatoes, and remaining marinade for drizzling.
