Ingredients

  • 1.5 lb baby potatoes
  • 3 tbsp olive oil
  • 3 cloves garlic
  • ¼ cup fresh parsley
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

    Preheat oven to 425°F. Cut 1.5 lb baby potatoes in half and place on a baking sheet.

    Drizzle with 2 tbsp olive oil, sprinkle with 0.5 tsp salt and 0.25 tsp pepper. Toss to coat.

    Roast for 25-30 minutes, until golden and fork-tender, stirring once halfway.

    While potatoes roast, mince 3 garlic cloves and chop 0.25 cup parsley. Mix with remaining 1 tbsp olive oil.

    Toss hot potatoes with garlic-herb mixture. Serve with your favorite dipping sauce.
