Ingredients
- 1 lb ribeye steak
- 4 cloves garlic cloves
- 4 sprigs fresh thyme sprigs
- 2 tbsp olive oil
- 2 tbsp butter
- 1 tsp salt
- ½ tsp black pepper
Instructions
- 1
Pat the 1 lb ribeye steak dry with paper towels and season both sides with the 1 tsp salt and 0.5 tsp black pepper. Let it sit at room temperature for 20 minutes.
- 2
Heat the 2 tbsp olive oil in a cast-iron skillet over high heat until shimmering, about 2 minutes. Carefully place the steak in the pan and sear without moving for 3-4 minutes, until a deep brown crust forms.
- 3
Flip the steak and add the 4 garlic cloves (smashed) and 4 thyme sprigs to the pan. Cook for 2 minutes, then add the 2 tbsp butter and tilt the pan to let it melt.
- 4
Spoon the sizzling butter, garlic, and thyme over the steak continuously for 2-3 minutes, until the steak reaches your desired doneness (125°F for medium-rare, about 5-6 minutes total).
- 5
Transfer the steak to a cutting board and let it rest for 5 minutes. Slice against the grain and spoon the pan juices over the top before serving.
