Ingredients
- 1 lb large shrimp, peeled and deveined
- 8 oz andouille sausage, sliced into coins
- 2 ears corn, cut into 2-inch pieces
- 4 tbsp butter
- 2 tsp Cajun seasoning (or paprika, garlic powder, cayenne)
- 3 tbsp green onions, chopped

Heat butter in a large cast iron skillet over medium-high until foaming, ~90 seconds.

Add andouille and corn. Sauté for 3 minutes, stirring occasionally, until sausage edges brown.

Add shrimp and Cajun seasoning. Toss constantly until shrimp turn opaque and edges curl, ~4 minutes.

Taste and adjust seasoning. Transfer to a platter and scatter green onions over the top.
