Ingredients

  • 4 tbsp ghee
  • 1.5 lbs carrots, shredded
  • ¾ cup sweetened condensed milk
  • 4 whole cardamom pods, crushed
  • ½ cup cashews, roughly chopped
  • ¼ cup raisins
  • 2 tbsp milk powder
  • ¼ tsp salt

Instructions

    Heat ghee in a heavy-bottomed skillet over medium-high heat until it shimmers, about 1 minute.

    Add shredded carrots and crushed cardamom; stir constantly until carrots soften and deepen in color, 8–10 minutes.

    Pour in condensed milk and stir until the mixture is thick, glossy, and starts to pull away from the pan sides, 4–5 minutes.

    Fold in cashews, raisins, milk powder, and salt; mix until everything is evenly coated and no powder streaks remain.

    Press the warm mixture firmly into a parchment-lined 8x8-inch pan, smoothing the top with a spatula.

    Let cool to room temperature, about 8 minutes, then cut into squares and serve.
