Ingredients

  • 8 thighs bone-in, skin-on chicken thighs
  • 4 medium shallots, halved lengthwise
  • 3 tbsp fish sauce
  • 3 tbsp granulated sugar
  • 2 tbsp fresh lime juice
  • 4 cloves garlic, minced
  • ½ tsp black pepper
  • ½ cup fresh cilantro, chopped

Instructions

    Preheat oven to 425°F. Pat chicken thighs dry and season all over with salt and pepper.

    Whisk fish sauce, sugar, lime juice, minced garlic, and black pepper in a small bowl until sugar dissolves.

    Spread chicken skin-side up on a sheet pan with shallots cut-side down. Drizzle caramel sauce over chicken.

    Roast for 22–25 minutes until chicken skin is deep golden-brown and thighs reach 165°F at the thickest part.

    Remove from oven. The pan will be bubbling — tilt and spoon caramel juices back over the chicken once.

    Scatter fresh cilantro over the pan. Serve family-style straight from the sheet pan or plate individually.
